Tori's Kitchen - Strawberry Pound Cake

What you’ll need -

Mixer, flour sifter, cutting board, bundt pan, spoonula, cooling rack, butter, sugar, eggs, vanilla, flour, salt, sour cream, powdered sugar, milk, and strawberries.

For the Cake:

  • 2 sticks of butter (1 cup)

  • 2 cups of sugar

  • 5 eggs

  • 1 teaspoon of vanilla

  • 1/2 teaspoon of salt

  • 2 1/4 cups of all-purpose flour

  • 1/2 cup of sour cream

  • 1 1/4-1/2ish cups of chopped strawberries

For the Glaze:

  • 1 cup of powdered sugar

  • 2 Tablespoons of milk

Instructions:

Preheat your oven to 350 degrees. Beat 2 sticks of butter with your mixer until creamy. Add in 2 cups of sugar and beat until it’s fluffy. Once it’s combined well, add in the 5 eggs one egg at a time, and then add in the teaspoon of vanilla.

On a cutting board, chop up your strawberries until you have about 1 1/4- 1 1/2 cup. At this point, I also butter my bundt pan. Remember, in the words of Pioneer Woman - butter makes everything better.

In a different bowl, sift the 2 1/4 cups of flour and add in the 1/2 teaspoon of salt. Once that’s combined, slowly pour the flour mixture into the butter mixture. Hand fold in the 1/2 cup of sour cream and the chopped strawberries (Do this step by hand and not with your mixer). Once that’s mixed together well, pour the cake batter into the buttered bundt pan, and bake it for about 45-55 minutes. Personally, my oven is finicky, so I bake it for about 50 minutes, but just make sure you keep an eye on it.

Once the cake is done baking, I flip it over onto a cooling rack and let it cool for about 30 minutes. Once it’s cooled a bit, I put the bundt pan back on top of the cake, flip it upside down, and then flip it back over to put it on my cake stand.

After the cake cools for at least another hour, I mix together the glaze. Combine the cup of powdered sugar and 2 tablespoons of milk and mix it well on a high speed until it’s smooth and not clumpy. I then take a soup spoon and drizzle the glaze on top of the cake.

Y’all, this is one of my favorite desserts. It’s easy and delicious! Also, it’s extra delicious with your morning coffee.
